Hi,
I have some forum experience, and recently was applying for a position as a moderator and I was asked "How Much Experience Do You Have"....

I think I undersold myself as I have more experience than what I owned up to, but I did not want to seem like a braggart.  What is the best way to talk about your moderating experience?

The best way is to be honest and back up your answers with proof.  If you've moderated XYZ Forum for 2 years, say so, and ask the admin of that forum to back you up with perhaps an email, stating your achievements and experiences gathered.  Just don't claim to have done something that you really haven't done.  Honesty will get you everywhere  /

One way to prove yourself is to first make many selfless forum posts in their forum.   By selfless, I mean that you don't post links to commercial sites, advertise your paid services, or even use a signature to your own site.  Then, once you've proven yourself to be a contributing member for several months or even years, ask for a paid moderator position.
